Bacon potato frittatas 🥓
This is one of my favourite ways of disguising eggs for breakfast. It also makes an amazing lunch leftover treat.
~4-6 baby potatoes, cooked and cubed
~1/2 onion, chopped
~1 bell pepper, chopped
~6 green onions, chopped
~2 garlic cloves, minced
~3/4 cup shredded cheddar
~6 bacon strips, cooked and chopped
~1/4 tsp salt
~1/4 tsp pepper
~1/4 tsp cayenne
Preheat the oven to 375F (180C). Sauté the onions, garlic, and peppers over medium heat until tender. Remove from heat and add the potatoes, bacon, and cheese. Mix the eggs with the spices. Put the veg and bacon mixture in an oven proof dish and evenly pour the egg mixture on top. Bake for 20 minutes until the egg is set and give a few minutes to cool before serving!
I really love frittatas and may start to make them a weekend staple. I’ll have to experiment with egg substitutes for my vegan roommate 🙃
