Barbecue mushroom cheesy pasta 🍄
My mom used to make us Mac and cheese with mushroom soup and peas, a classic broke uni student staple in her days. I wanted to make my own version of this and it turned out amazingly and fed my nostalgia cravings!
~pasta of choice, cooked (I used penne but macaroni would be probably ideal)
~1 cup milk of choice (can make this vegan if you use vegan cheese)
~1 tbs flour
~2 cups shredded cheese (I used cheddar)
~1 tbs barbecue sauce
~green onions for garnish
Sauté the mushrooms in olive oil until they’re slightly browned, then add the peas for a few more minutes. In a separate saucepan mix the milk and flour until combined. Then bring that mixture to a boil and continue until mixture has thickened. Remove from heat and add the cheese until a sauce has formed. Add the barbecue sauce, mushrooms and peas to the sauce. Pour over the pasta and garnish with green onions!
This is a fantastic comfort food that can be a quick and easy staple year round!
