Best chilli ever 🌶

Over the first lockdown we experimented with chilli a few times and this recipe was the one we deemed the most flavourful chilli! Some of the ingredients may seem strange, but trust me 😉

~1 package ground beef
~1 onion, chopped
~4 garlic cloves, minced
~1 can kidney beans, drained and rinsed
~2 tbs tomato paste
~1 can crushed tomatoes
~2 tbs chilli powder
~1 tbs cumin
~1 tsp oregano
~1 tbs olive oil
~1 tbs Apple cider vinegar
~1 tbs brown sugar
~1 cup chicken stock
~2 tbs fish sauce
~1 tbs soy sauce
~1 tsp cocoa powder
~1 tbs lime juice

Brown the ground beef in the olive oil. Mix the chicken stock, fish sauce, soy sauce, cocoa powder, and lime juice together. Add the onion, garlic, and rest of spices to the ground beef and sauté for 5 minutes. Deglaze the pot by adding half the chicken stock mixture and scrape all the brown bits from the bottom (they will add more flavour to the chilli!). Add the beans, paste, tomatoes and the rest of the chicken stock mix and simmer for 30 mins. Once it’s finished, add in the sugar and vinegar. Garnish however you want! We used jalapeño, radishes, green onions, cilantro, sour cream, and cheese.

We actually did this in the instant pot and cooked it on high for 10 minutes but this will work on a stove top as well.

We had it with this wine we got from coopuk . It was really sweet for a red, I probably wouldn’t drink it on its own. But it would be ideal in sangria!
