Cheesy mushroom toast 🍞

I’ve been making variations of this recipe for years. Usually I make mini mushroom cups, but over lockdown I didn’t have my usual baking tools. So I improvised with regular toast and couldn’t be more happy with how it turned out!

~1 leek, chopped
~1 package mushrooms, chopped
~1 tbs parsley
~3 tbs butter, melted
~2 egg yolks
~1/2 cup grated mozzarella
~1/4 cup grated Parmesan
~4 slices bread

Sauté the leeks and mushrooms in some olive oil until soft. Remove from heat and mix in a bowl with yolks, cheese, and parsley. Put the bread on a baking tray and brush with melted better. Spoon on the mixture and cook on 350 for 20 minutes.

This would probably go well with avocado and make a super fancy avocado toast to serve someone for breakfast when you’re aiming to impress 😉
