Corn chowder 🌽

This soup is such a quick one to whip up when you want something creamy and comforting!

~2 tbs butter
~1 red onion, chopped
~1 red pepper, chopped
~2 garlic cloves, minced
~6 potatoes, chopped
~1 tsp dill
~1/2 tsp chilli powder
~7 cups corn, frozen or canned
~4 green onions, chopped
~1 cup cream
~4 cups vegetable stock

Melt the butter and cook the onions, red pepper, and garlic until softened. Add the stock, potatoes, and spices and bring to a boil. Cover and simmer for 20 minutes. Add the corn and cook for another 5 minutes. Purée the soup and then add the cream and add the green onions and simmer on low for another 10 minutes.

This soup will freeze well, but make sure you don’t freeze it with the cream. After you defrost it, add the cream while reheating!
