Creamy Cajun Chicken Pasta 🐔

I almost forgot about this one until I found it in my camera roll! I’m posting so that I remember this one but also to share it with you all. Perfect comfort food for cold february weather.

~3 cups pasta
~500g chicken, cubed
~1 tsp lemon zest
~1 tbs Cajun
~1 tsp basil
~olive oil
~2 bell peppers, chopped
~6 spring onions, chopped
~5 garlic cloves, minced
~1 package mushrooms, chopped
~1 cup cream
~Parmesan

Cook the pasta according to directions. Drain and set aside. Over a medium heat fry the chicken in olive oil and garlic until cooked through. Add the mushrooms and peppers for another 3-4 minutes. Add the spices and the cream and heat through but don’t let it come to a boil. Add the pasta and let it heat through for five minutes. Top with green onions and Parmesan!

This pasta is an easy variation on a cream sauce that is quick to whip up on day that you can’t be bothered to put in effort but want a nice hot dinner!
