Sweet potato enchiladas 🇲🇽

Once upon a time I was a weirdo who didn’t really get the hype over Mexican food. Over the first lockdown we were eating a lot of burrito bowls and chilli. I wanted to try something new in that realm so I made enchiladas one night and I couldn’t have been more happy with how they turned out! I did make them vegetarian but you could easily add whatever you want!

~1 can black beans
~1 bag spinach
~1/4 cup salsa (you can make your own!)
~8 tortillas
~2 cooked sweet potatoes (I just did them in the microwave for 8 minutes)
~1 cup cheddar cheese, shredded
~enchilada sauce (I made mine with a recipe from cookieandkate !)

Mix the potato, spinach, beans, and salsa together in a bowl. Spread 2 large spoonfuls into a tortilla and wrap with the open side facing down. Top with cheese and enchilada sauce (see below) and bake on 200C (400F) for 20 minutes!

This is technically vegan if you leave out the cheese! I have a vegan roommate so I’m always trying to figure out the vegan alternatives now so that she doesn’t miss out on the fun 🤩
