Turkey bolognese 🍝

I’ve been on a minced turkey kick lately. I don’t really eat red meat but can tolerate it cut up into something like a pasta sauce. Minced turkey is much lower in fat content and gives the exact same effect!

~olive oil
~1 onion, chopped
~3 garlic cloves, minced
~2 celery stalks, chopped
~2 carrots, chopped
~1 zucchini, chopped
~1 package of ground turkey
~1 can diced tomatoes
~cooked spaghetti noodles
~Parmesan for topping

Over a medium heat pour the olive oil, garlic, and onion until fragrant and the onion softens. Add the carrots, celery, and zucchini. When they start to sizzle reduce heat, cover, and cook for 10 mins.

Add the turkey and turn the heat back up to medium. Cook until the turkey is not pink anymore. Add the diced tomatoes and cook for another 10 minutes. Put the sauce on the pasta and top with Parmesan!

I love to add a ton of veggies to my Bolognese sauce to get in my five a day! We had this with a pineapple margarita in my cocktail highlights 🍹
